It’s that time of year when kitchens fill with both pretty pink-and-red treats and hearty game-day fare. While sweet valentines-style dishes have their place, today we’re focused on the latter — bold, meaty, cheesy snacks made for sharing around the big game.
Appetizers are my favorite meal to nibble on, and when football is on the schedule I steer toward the indulgent side: ooey-gooey, savory bites that are perfect with cold drinks and cheering crowds. This Mushroom and Chorizo Queso Dip checks all those boxes.

Full disclosure: I made this for myself. My husband prefers milder fare and the Mexican chorizo I can find here tends to be spicy, so I knew I might be the only one polishing off the skillet. That turned out fine — sometimes a whole pan of molten cheese and spicy sausage is a deliciously selfish pleasure.
If heat isn’t your thing, swap in Italian sausage or a milder chorizo. No matter the meat, be sure to drain off excess fat after cooking — the dip is rich and flavorful, but removing extra grease keeps it from getting too messy while still delivering plenty of savory goodness.
With just a few ingredients this recipe comes together fast and yields a deeply flavored dip: savory chorizo, tender mushrooms, and melty Monterey Jack cheese. It’s simple, comforting, and undeniably perfect for game day. Serve it straight from the oven topped with bright scallions and cilantro, alongside plenty of tortilla chips for scooping.

Mushroom and Chorizo Queso Dip

- 10 oz Mexican chorizo
- 1/2 lb mushrooms quartered
- 6 oz Monterey Jack cheese cubed
- scallions and cilantro for topping
- tortilla chips for serving
Instructions

Preheat the oven to 350°F (175°C).

In a cast iron or oven-safe skillet, cook the chorizo over medium heat, breaking it up as it browns.

When the chorizo begins to brown, add the quartered mushrooms and cook until the mushrooms are tender, about 6–7 minutes. Drain off as much fat as you can.

Top the chorizo and mushrooms with the cubed Monterey Jack. Transfer the skillet to the oven and bake until the cheese is melted and bubbly, about 10–12 minutes.

Garnish with sliced scallions and chopped cilantro. Serve hot with tortilla chips for dipping.
