Ingredients

  • 1 1/2 lb Ground Beef
  • 15 oz Diced Tomatoes
  • 28 oz Enchilada Sauce
  • 15 oz Black Beans, drained and rinsed
  • 15 oz Corn, drained
  • 1 cup Zucchini, sliced
  • 2 tbsp Lime Juice
  • 1 medium Onion, chopped
  • 4 oz Green Chiles
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1/2 tsp Salt
  • 1/2 tsp Pepper

Instructions

  1. In a heavy-bottomed pot, cook the ground beef over medium heat until browned.
  2. Place the cooked meat and all remaining ingredients in a crock pot or soup pot. Simmer until heated through and flavors meld. The longer it cooks, the better the flavor.
  3. Serve with tortilla chips, shredded cheese, sour cream, cilantro, or your preferred toppings.
