  • 3 large egg whites
  • 1/2 teaspoon almond extract
  • 1/3 cup erythritol or other sugar substitute
  • 1 1/2 tablespoons butter, melted
  • 1/2 teaspoon baking powder
  • 1 1/2 packed cups unsweetened shredded coconut

  • 16 ounces cream cheese, softened
  • 1/2 cup erythritol or other sugar substitute
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup fresh raspberries
  • Keto whipped cream and extra raspberries for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and spray an 8-inch square baking pan with nonstick cooking spray.
  2. In a medium bowl, stir together the crust ingredients until well combined. Press the mixture evenly into the prepared pan.
  3. Bake the crust for 13 to 15 minutes, then remove and let cool slightly while you prepare the filling.
  4. Place the softened cream cheese in the bowl of an electric mixer and beat until smooth.
  5. With the mixer on low, add the erythritol and vanilla. Add the eggs one at a time, then increase the speed to medium and beat just until combined.
  6. Gently add the raspberries and mix on low for about 10 seconds to incorporate without breaking them up completely.
