Creamy Rotel Dip Recipe — Crowd-Pleasing Party Appetizer

This Rotel dip is the one my mom made for every family gathering when I was growing up. She loved it because it’s simple to prepare and every kid could help make it.

How to Make the Best Rotel Dip

Cook the Onion + Beef

Heat 1 tablespoon of avocado oil in a skillet over medium-high heat. Add 1/2 large diced yellow onion and 1 lb. ground beef. Cook, breaking up the meat, until no longer pink, about 5 minutes. Stir in 1 teaspoon chili powder.

Add the Cheese + Rotel

Reduce the heat to medium-low, add 16 oz. cubed Velveeta and a 10 oz. can of Rotel (undrained). Stir until the cheese is fully melted and the mixture is smooth and combined.

Serve + Enjoy

Transfer the dip to a serving dish and serve immediately with chips or other dippers. For parties, keep the dip warm in a slow cooker set to “warm.”

Ingredient Substitutions

This dip is highly adaptable. Try these options to change the flavor or lighten it up:

  • Swap ground beef for ground turkey or chicken for a leaner version, or use black or pinto beans to make it vegetarian.
  • Add extra vegetables like bell peppers, extra onions, or chiles — if you add more veg, consider using an additional can of Rotel.
  • For more spice, use chorizo instead of hamburger, or add jalapeños or hot sauce when the cheese melts.

Dip Too Thick?

The dip is meant to be thick, but if you prefer a looser consistency, stir in a few tablespoons of whole milk until you reach the desired texture. If it thickens as it cools, return it to low heat or add a splash of milk while reheating.

Storage

Let the dip cool completely, then store in an airtight container in the refrigerator for up to 5 days.

To reheat: warm the dip gently in a small saucepan over medium heat with a few tablespoons of whole milk, stirring until smooth and heated through.

Ingredients
