Maple Dijon Pork Tenderloin with Roasted Vegetables Recipe

My family eats a lot of chicken and turkey, and we keep Mondays plant-based, but every so often I like to serve something different. This week I made Maple Dijon Glazed Pork Tenderloin, a recipe I learned from my mother-in-law. I wasn’t sure how the kids would react, but they both loved it — my four-year-old even asked for seconds. The recipe is simple: about 10 minutes to prepare and just over an hour to cook, making it a great option for evenings when you get home early enough to finish dinner that night.

Maple Dijon Glazed Pork Tenderloin

This recipe is gluten-free, dairy-free, nut-free and egg-free. It pairs well with creamy polenta and broccoli or served over rice.

Ingredients

  • 2/3 cup maple syrup
  • 3 tbsp gluten-free Dijon mustard
  • 2 tbsp apple cider vinegar
  • 2 tbsp soy sauce
  • Salt and pepper to taste
  • 2 lbs pork tenderloin boneless

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Place the pork in a shallow baking pan (a 13×9-inch Pyrex works well).
  3. Whisk the maple syrup, Dijon mustard, apple cider vinegar, soy sauce, and salt and pepper together. Pour the glaze evenly over the pork.
  4. Bake for about 1 hour and 15 minutes, or until the internal temperature reaches 145°F (63°C).
  5. Remove from the oven and let the pork rest for 10 minutes before slicing.
  6. Slice the pork and serve on a platter with the remaining glaze on the side.
  7. Enjoy!
