Hearty Beef and Lentil Stew Recipe for Comforting Weeknight Meals

This time of year there is nothing better than cooking in your crock pot. One pot, slow cooking and comforting aromas — perfect for winter dinners. This lentils and beef stew is simple to prepare and delicious served over white rice. It makes a great weeknight meal. Enjoy!

Lentils and Beef Stew (Estofado de Lentejas con carne)

Ingredients

  • 1 ½ pounds beef for stew, cut into cubes
  • 1 cup lentils
  • 3 ½ cups beef stock
  • Salt and pepper, to taste
  • 1 garlic clove, minced
  • 1 bay leaf
  • 1 carrot, peeled and sliced
  • ¼ cup finely chopped onion
  • ¼ teaspoon ground cumin
  • ½ teaspoon tomato paste
  • 2 potatoes, peeled and diced
  • ¼ cup chopped fresh cilantro

Instructions

  1. In a slow cooker, combine the beef, lentils, beef stock, garlic, bay leaf, carrot, onion, cumin and tomato paste. Season lightly with salt and pepper, keeping in mind you can adjust seasoning later.
  2. Cover and cook on high for 4 hours, or until the beef and lentils are tender.
  3. Add the diced potatoes and cook another 30 minutes, until the potatoes are tender.
  4. Stir in the chopped cilantro and adjust seasoning with salt and black pepper to taste.
  5. Serve the stew hot over white rice.
