Chocolate Chip Cookie for One

One Monday afternoon a friend mentioned making a single, oversized cookie just for herself. A few of us chimed in that it sounded like a great idea — so three of us made one. I grabbed a cereal bowl, some flour, butter and chocolate, and my cookie turned out delicious.

Yesterday I made it again, wrote down the measurements, and refined the recipe into this perfected single-serve cookie.

Single Serve Chocolate Chip Cookie

Ingredients

  • ½ teaspoon flax seed, freshly ground
  • 1 ½ teaspoons warm water
  • 1 tablespoon butter (non-dairy / margarine)
  • 1 ½ tablespoons maple syrup
  • ¼ cup gluten free all-purpose flour
  • ¼ teaspoon baking powder
  • pinch sea salt
  • handful dark chocolate chips

Instructions

  1. Preheat oven to 350 °F.
  2. Combine ground flax and warm water; set aside to thicken.
  3. Cream together the butter and maple syrup, then add the flour (do not mix immediately).
  4. Stir baking powder and sea salt into the flour, then fold the dry mixture into the wet ingredients. Add the flax gel and chocolate chips, mixing until just combined.
  5. Spoon the dough onto a prepared baking sheet (parchment or sprayed). Bake at 350 °F for about 10 minutes, or until cooked through.
