I love the ritual of taking a laptop to my favorite bakery-café for a change of scene, but when that’s not possible I recreate my favorite honey lavender latte at home. The syrup is easy to make and frothing is handled simply with a mason jar. I prefer oat milk for its creaminess, but you can use any milk you like.

HOW TO MAKE HONEY LAVENDER SYRUP

This syrup is infused with lavender and sweetened with honey and sugar for a balanced floral-sweet flavor. If you prefer a syrup made only with honey, there are variations that omit sugar entirely.

  1. Bring the water and lavender to a simmer in a small saucepan.
  2. Add honey and sugar, continue simmering and stir until fully dissolved.
  3. Remove from heat and let the mixture steep and cool for an hour or two to develop flavor.
  4. Strain the syrup into a clean jar and store in the refrigerator.

HOW TO MAKE HONEY LAVENDER OAT MILK LATTES

The mason jar method is a reliable, low-tech way to heat, mix and froth milk. Heat the milk and syrup together, add brewed coffee, secure the lid and shake vigorously (use a towel to protect your hands from the heat). This creates a smooth, lightly frothed latte without a milk steamer.

I prefer minimal foam — a creamy, light froth — and the jar shake achieves that. If you add powdered supplements like collagen, they blend in nicely with this method.

  1. Pour oat milk and 2 tablespoons (about 30 ml) honey lavender syrup into a mason jar and heat for 30–40 seconds in the microwave (or warm on the stove).
  2. Add 6 ounces of strong brewed coffee, secure the lid tightly, wrap with a dish towel and shake well until frothy.
  3. Carefully remove the lid and pour into a cup. Optionally garnish with a light sprinkle of lavender buds or a dollop of whipped cream.

RECIPE NOTES AND TIPS

  • Adjust to taste: Increase or decrease syrup, coffee or milk to suit your preference. The amounts here are a good starting point.
  • Milk choices: Oat milk froths well and is creamy; almond or dairy milks also work. I don’t recommend whole milk or half-and-half for this method.
  • Frothing method: I froth in a mason jar, but any frother or steam wand that you prefer will also work.

For Honey Lavender Syrup

  • 1 cup water
  • 2 tablespoons dried lavender budsculinary lavender
  • ½ cup honey
  • ½ cup sugar

For Oat Milk Lattes

  • 4 ounces oat milkor any milk
  • 2 tablespoons (30ml) honey lavender syrup
  • 6 ounces strong brewed coffee
  • Optional: whipped cream and lavender buds, for serving

Instructions

To make the syrup:
