If your family prefers milder flavors, you can always dial back the spice, but for those who enjoy a kick, this version with smoky honey habanero seasoning is hard to beat.

I discovered the Smoky Honey Habanero seasoning in a Spiceology sampler set and knew it would be excellent on poultry. It adds sweet, smoky heat that pairs perfectly with chicken. If you don’t have that exact spice, use any smoky, slightly sweet habanero-based rub or a similar blend you enjoy.

What is a Cornish Game Hen?
A Cornish game hen is a type of young broiler chicken, served immature and usually weighing under 2 pounds. They are not true game birds but are miniature chickens ideal for individual portions. You’ll most often find them in the frozen section at the grocery store.
How to cook Cornish hens on a pellet grill
These hens are affordable and make a great value meal. I often pick up two for a low price and still serve something that tastes special when smoked on a pellet grill.
Thawing: If frozen, thaw the hens safely in the fridge for a day or, for quicker thawing, on the counter following food safety guidelines.
Prep: Once thawed, pat the hens dry, rub them with olive oil, and place them in a container.
Season: Generously season with Smoky Honey Habanero (or your chosen spice blend), salt, and pepper.
Rest: For best flavor, let the seasoned hens rest in the refrigerator for a few hours or overnight. If you season ahead, keep them chilled until you’re ready to smoke.
Bring to room temperature: An hour before smoking, remove the hens from the fridge so they can come closer to room temperature.

I smoke to internal temperature rather than a fixed time for best results. On a pellet grill, set a low smoke or smoke setting first to infuse flavor, then finish with gentle heat. I use mesquite pellets for a bold smoke, but apple, cherry, or hickory work well too.
Start your smoker and create smoke. Once the smoker is producing smoke, place the hens on the grate. If you like a light cold-smoke flavor first, you can let them sit on smoke and then raise the temperature later to finish cooking.
When you’re ready to finish cooking, set the smoker to 225°F. This gives a steady, even heat that crisps skin and cooks the meat through without drying it out.
Rotate and flip the hens as needed to ensure even browning and smoke exposure.

Use a meat thermometer and remove the hens once the thickest part of the breast reaches 165°F. Let the birds rest a few minutes before serving to let the juices redistribute.

How to store leftover smoked Cornish game hens
Store leftovers in an airtight container in the refrigerator; they will keep for 2–4 days. You can debone the hens and freeze the meat in airtight bags or containers for up to 30 days. Vacuum sealing or using freezer-grade bags helps preserve freshness. Label and portion with a food scale if you want convenient single-serving packages.
What to serve with smoked Cornish game hens
Starches and vegetables pair well. Classic side ideas include Caesar salad, rice, smoked baked potatoes, smoked deviled eggs, twice-baked potatoes, smoked potato salad, roasted baby potatoes, or a creamy macaroni salad with deviled eggs. Finish the meal with a simple dessert of your choice.
