Dark Chocolate Guinness Fudge
Beer fudge is simply fudge made with the addition of beer. Because beer adds liquid and flavor, the recipe uses slightly different proportions of chocolate and sweetened condensed milk to reach the right consistency.
I love making easy gourmet fudge at home, and this dark chocolate Guinness version is one of my favorites. It’s straightforward to prepare, though it requires a bit more time than some fudges because the beer must be reduced so the fudge retains just a hint of that stout character.

I often make this fudge for St. Patrick’s Day. It isn’t green or decorated in a holiday theme, but since it’s made with an Irish stout, that feels festive enough. The beer flavor is subtle—just enough to complement the chocolate without overpowering it.

Making Fudge with Beer
This fudge pairs beautifully with salty mini-twist pretzels. The sweet-and-salty contrast is delightful, and pretzels are a classic beer companion. You can press whole pretzels into each square for presentation, or crush some and fold them into the fudge or sprinkle them on top—any approach is delicious.
The method is simple and requires no double boiler. Start by reducing the beer in a small saucepan over medium-high heat until it’s concentrated—this takes about 20–25 minutes. Melt the chocolate with the sweetened condensed milk (I do this in short bursts in the microwave, stirring between intervals) until smooth, then stir in the reduced beer and vanilla. Pour into a prepared pan and chill until set.

Guinness Fudge
This recipe uses dark chocolate chips and sweetened condensed milk to create a creamy, rich fudge. A handy tip: line your baking pan with parchment paper or wax paper before pouring the fudge. That lets you lift the whole block from the pan for easy slicing and serving.
Beer Fudge Recipe
While this recipe calls for Guinness, other full-bodied dark beers would also work—try a dark lager or a Negra Modelo for a slightly different flavor profile. Light beers are less suitable because their subtle flavors will be lost under the dark chocolate.

Ingredients
- 1 bottle Guinness beer
- 16 oz dark chocolate chips
- 1 can (14 oz) sweetened condensed milk
- 1 tsp vanilla extract
- 20–25 mini-twist pretzels
Instructions
- In a small saucepan over medium-high heat, bring the beer to a low boil and simmer until reduced to about 1/3 cup, about 20–25 minutes. Remove from heat and set aside to cool slightly.
- Line an 8×8-inch baking pan with parchment or wax paper, leaving some paper hanging over the edges to help lift the fudge later; set aside.
- Place the chocolate chips and sweetened condensed milk in a microwave-safe bowl. Heat for one minute, stir, then continue heating in 30-second bursts, stirring between each, until the chocolate is fully melted and the mixture is smooth. Stir in the beer reduction and vanilla until evenly combined.
- Pour the fudge into the prepared pan and press pretzels into the top, or sprinkle crushed pretzels over the surface. Refrigerate until set, about 2 hours. Lift the fudge from the pan using the overhanging paper and cut into squares.
