In college I had amazing roommates. One of them used to make pull-apart monkey bread, and I swear it felt like a life-changing treat. She told me her mom baked it for Christmas morning, and I quickly understood why — it was insanely delicious.

I never attempted to recreate that classic version for years because I didn’t have the original recipe and wasn’t feeling ambitious. Recently I found myself reminiscing about that bread and decided to create a simpler, healthier version. That’s how these cinnamon clover rolls — a paleo take on monkey bread — came to be.

I’m so happy I tried. These rolls are lightly sweetened rather than drenched in sugar like the original college recipe, and I actually prefer that balance. They’re grain-free, nut-free, and gluten-free thanks to coconut flour, and their taste and texture are surprisingly similar to the classic version. Best of all, they’re quick and easy to make — no yeast, rising, or complicated steps required.

Serve them warm from the oven for the best experience. If you have leftovers, store them in an airtight container in the refrigerator for 1–2 days and warm them before serving. They’re at their most comforting right out of the oven.

Making a special homemade breakfast at Christmas adds a lovely tradition: the smell of cinnamon filling the house, the warmth of the rolls bringing everyone together to chat about gifts and the season. It’s also a quiet moment to reflect and relax after holiday preparations.

Description

This monkey bread is the perfect cinnamon-sugar clover roll for a sweet breakfast or brunch. It’s lightly sweet yet wonderfully comforting.


Ingredients

  • 1 cup arrowroot flour
  • ½ cup coconut flour
  • 1 tsp Paleo baking powder
  • ¼ tsp salt
  • 2 eggs
  • ¼ cup coconut oil, melted
  • ½ cup unsweetened plant-based milk (almond or cashew)
  • 2 Tbsp coconut sugar
  • ½ heaping tsp cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sift together the coconut flour, arrowroot flour, baking powder, and salt.
  3. Stir in the eggs, melted coconut oil, and plant-based milk until a dough forms.
  4. Combine the coconut sugar and cinnamon in a separate bowl.
  5. Roll the dough into tablespoon-sized balls, then roll each ball in the cinnamon-sugar mixture.
  6. Place three balls into each cup of a well-greased muffin tin.
  7. Bake 15–20 minutes, until set and lightly golden. Serve warm.

Notes
