This is my family’s irresistible green beans and bacon—so good it’s practically addictive. It’s a simple, comforting dish I grew up eating thanks to my grandmother and our garden full of scarlet runner beans.

Caramelized green beans sautéed in bacon fat with crispy bacon pieces—what’s not to love? Many people ask how I make my green beans and bacon, so here’s the straightforward method I use.

Can you eat Green Beans on Keto?

Yes. Keto is a metabolic state, not a food ban. You can include green beans as long as they fit your daily macros. One cup of green beans has roughly 7 grams of carbs and 3.5 grams of fiber, for a net carb total of about 3.5 grams. Green beans also provide vitamins and fiber, so I’m happy to include them on a low-carb or ketogenic plan.

This recipe is fast and easy—perfect as a side dish or, when beans are abundant, a satisfying dinner on its own.

How to Make Pan-Fried Keto Green Beans and Bacon Crack

Prep time: 5 minutes
Cook time: 5–10 minutes
Serves: 4–6 as a side, or 2 as a main

Ingredients:

My Scarlet Runner Beans
  • 4 thick-cut or 6 regular bacon slices, cut into bite-size pieces (scissors make this easy)
  • 1½ lbs fresh green beans, trimmed and cut into bite-size pieces (I love using long flat scarlet runner beans)
  • Optional: sliced scallions and/or minced garlic
  • Sea salt and freshly ground black pepper, to taste

Directions:

  • Heat a large cast-iron skillet over medium-high heat and cook the bacon, turning once so it browns evenly. Use a splatter guard if you like.
  • Remove the bacon with a slotted spatula and set it on paper towels to drain. Leave the bacon fat in the pan.
  • Add the trimmed green beans to the hot skillet and sauté until tender and starting to caramelize. If using leftover cooked beans, cook only until warmed and slightly browned.
  • If there is excess fat, carefully pour it into a heatproof container or can.
  • Return the bacon to the pan and heat until everything is warmed through and the bacon reaches your desired crispiness. Season with salt and pepper. If using scallions or garlic, add them toward the end so they don’t burn.

Remove from heat and serve immediately.

A quick, low-carb side or a light meal when fresh beans are in season. If you prefer softer beans, blanch or steam them briefly before frying—this also works well with leftover cooked beans.

Ingredients

  • Sea salt and freshly ground black pepper, to taste

Instructions

  1. Cook the bacon in a large cast-iron skillet over medium-high heat, turning once so it browns evenly. Use a splatter guard if desired.
  2. Transfer the bacon to paper towels to drain, leaving the rendered bacon fat in the pan.
  3. Add the green beans and fry until tender and browned. If using precooked beans, reduce the cooking time—just brown and heat through.
  4. Drain any excess fat into a heatproof container if needed.
  5. Return the bacon to the skillet and cook until everything is hot and the bacon is crisp to your liking. Season with salt and pepper, and stir in scallions or garlic if using.
