They say you only truly appreciate something once it’s gone — and that’s painfully true. Recently parts of Italy have been hit by heavy rains and flooding; some areas even lost power for days. Experiencing those outages made me deeply grateful for simple things like light and electricity. In my town it rained without stop from Saturday to Monday, and only yesterday did a shy sun peek through the clouds. During those days we had several blackouts — including while I was baking these pumpkin muffins (which is one reason the baking time stretched to 40 minutes).

Pumpkin muffins — a safe bet!
I’ll be honest: this recipe was a last-minute creation. Last week, while I was preparing roasted Brussels sprouts, I realized I hadn’t made anything for Halloween. No way I was missing that opportunity — I love celebrating every occasion. With my English-speaking audience growing, I knew many people would be searching for festive recipes.

My mind immediately put the pieces together: I had pumpkin purée in the fridge and some cream cheese… ding ding — idea! Why not make pumpkin muffins and top them with a cream cheese swirl? I grabbed my ingredients, making sure the eggs were at room temperature, and got to work.
The muffins turned out incredibly tender and moist (see photos), perfectly sweetened and with an ideal texture. If you prefer a sweeter finish, a sprinkle of powdered sugar on top works beautifully.

About the pumpkin: since it is the main ingredient, choosing the right pumpkin matters. If you’re unsure, ask your greengrocer — they can help you pick a squash suitable for purée. I used Kabocha, a sweet variety with green skin. The cream cheese adds a delicate tang that complements the warm spices.
How to make pumpkin purée at home
In many international blogs you’ll find canned pumpkin purée, but canned pumpkin is not commonly sold everywhere. Making your own purée is easy and often tastier. Cut the pumpkin in half or into quarters, place it on a baking sheet lined with parchment, and roast it in the oven at 160–170°C (320–340°F) until tender when pierced with a fork. Scoop out the seeds and flesh with a spoon, then pass it through a sieve, mash it with a potato masher, or blend it briefly until smooth. That’s it — homemade purée ready to use.

PUMPKIN MUFFINS

Ingredients
- 50 g olive oil (or neutral oil)
- 50 g whole cane sugar
- a few drops vanilla extract
- 2 eggs, at room temperature
- 300 g pumpkin purée
- 120 g all-purpose flour (organic if possible)
- 1 teaspoon (or more) ground cinnamon
- a pinch of salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon apple cider vinegar
- 90 g cream cheese (I used a low-fat option; you can substitute Greek yogurt)
- Powdered sugar (optional, for dusting)
Instructions
- Preheat the oven to 170°C (340°F).
- In a bowl, beat the oil, vanilla, and cane sugar with an electric mixer until combined. The mixture will be creamy but not fluffy.
- Add the eggs and continue beating, then stir in the pumpkin purée.
- Sift the flour with the salt and cinnamon, then gradually fold it into the wet ingredients using a spatula. Work gently to avoid lumps.
- As the last step, add the baking powder, baking soda, and apple cider vinegar. Pour the vinegar over the baking soda so it fizzes, then mix briefly.
- Fill muffin cups or paper liners about 3/4 full.
- Mix the cream cheese with a little powdered sugar if desired. Spoon a teaspoon of this mixture onto each muffin. Use a toothpick to swirl the cream cheese into the batter, creating a marbled effect.
- Bake for about 40–45 minutes, or until a skewer inserted into the center comes out clean. Cool the muffins on a rack.
- Store the muffins in the refrigerator.
