Easy Brown Butter Banana Bread

Mondays can feel long, so a simple, comforting loaf is the perfect pick-me-up. Brown butter transforms ordinary banana bread into something special: the butter is cooked until the milk solids caramelize and the aroma turns toasty and nutty. That small extra step adds depth and complexity to a classic quick bread, making each slice both familiar and a little elevated.

Easy Brown Butter Banana Bread

This recipe is straightforward, forgiving, and dependable. Overripe bananas are important here — they bring natural sweetness and moisture, and they mash easily into the batter. The brown butter should be watched carefully while it cooks; once it gives off a rich nutty scent and the solids turn golden-brown, remove it from the heat so it doesn’t scorch. The result is a loaf that stays soft and tender, with a subtle caramelized butter note that pairs beautifully with cinnamon.

The recipe has been a family favorite for years and is simple enough that a novice baker can make it with confidence. The loaf bakes up with a golden crust and soft interior; an optional banana half placed on top before baking gives a rustic, attractive finish. Serve slices warm with a smear of butter, or enjoy it at room temperature with coffee for an easy breakfast or snack.

Ingredients

  • 1/2 cup one stick butter, melted and browned
  • 1 2/3 cup all-purpose flour
  • 1 tsp. ground cinnamon
  • 1 tsp. baking soda
  • 3 overripe bananas, plus half a banana for topping (optional)
  • 2/3 cup granulated sugar
  • 1 egg, room temperature, lightly beaten
  • 1 tsp. vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C) and position the rack in the middle of the oven.
  • Grease a 9 x 5-inch loaf pan well with nonstick spray or a light coating of butter and flour.
  • To brown the butter: melt the butter in a small saucepan over medium heat, stirring occasionally. Watch closely—after 3–4 minutes the milk solids will turn golden and the butter will smell nutty. Remove from heat and set aside to cool slightly.
  • In a medium bowl, whisk together the flour, cinnamon and baking soda. Set aside.
  • In a large bowl, mash the overripe bananas with a fork. Add the browned butter, then stir in the sugar, beaten egg and vanilla until evenly combined.
  • Fold the dry ingredients into the banana mixture and mix just until combined. Avoid overmixing to keep the loaf tender.
  • Pour the batter into the prepared pan and, if desired, lay half a banana across the top for a decorative finish.
  • Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, tent with foil for the remaining bake time. Remove from oven and cool on a wire rack for 15 minutes before removing the loaf from the pan.
