Ingredients

  • 1 lb boneless skinless chicken breasts – sliced into 4 fillets
  • 4 medium potatoes – sliced into sixths (Russet recommended)
  • 1 large yellow onion, sliced
  • 28 oz diced tomatoes (1 can)
  • 2 cups fat-free chicken broth
  • 2 tbsp chipotle seasoning blend
  • 1 tbsp garlic powder
  • Salt and pepper to taste

Instructions
