BAKER NOTES
-
Use full-fat cream cheese for best texture and flavor; avoid low-fat varieties.
-
Bring the cream cheese to room temperature before mixing to ensure a smooth, lump-free batter.
-
To reduce the chance of cracked tops, turn off the oven when baking finishes and allow the cheesecakes to rest in the warm oven for a few minutes before removing. The centers should still be slightly soft when you take them out. Then cool completely and refrigerate overnight for the best texture.

- 2 tsp flour
Instructions
Crust Directions
-
Preheat the oven to 300°F (150°C) and line a cupcake pan with paper liners.
-
In a medium bowl, combine the crushed graham crackers, ground cinnamon, sugar, and melted butter. Stir until the mixture resembles moist sand.

Add the eggs one at a time, mixing until fully incorporated and the batter is silky.
-
Set aside the plain cheesecake batter. In a separate medium bowl, whisk together the pumpkin puree, cinnamon, allspice, and flour until smooth to make the pumpkin swirl mixture.

Stir about 2/3 cup of the plain cheesecake mixture into the pumpkin mixture to lighten it slightly.
-
Spoon roughly 2 tablespoons of the plain cheesecake batter onto each crust.

Add about 1 tablespoon of the pumpkin cheesecake mixture on top of the plain batter in each cup.
-
Use a butter knife to gently swirl the two batters together to create a marbled effect.
-
Bake the mini cheesecakes at 300°F for about 30 minutes, or until the edges are set and the centers are still slightly jiggly.
-
Remove from the oven and allow the cheesecakes to cool completely on the counter.
-
Transfer to the refrigerator and chill overnight for best texture and flavor.
-
