Add the Cheese + Rotel
Reduce the heat to medium-low, add 16 oz. cubed Velveeta and a 10 oz. can of Rotel (undrained). Stir until the cheese is fully melted and the mixture is smooth and combined.
Serve + Enjoy
Transfer the dip to a serving dish and serve immediately with chips or other dippers. For parties, keep the dip warm in a slow cooker set to “warm.”

This dip is highly adaptable. Try these options to change the flavor or lighten it up:

Rotel Dip
