Oven Roasted Frozen Broccoli

A quick and simple method for roasting frozen broccoli. Lemon-herb seasoning is a favorite, but this recipe also pairs well with Parmesan, Cajun spice, Montreal steak seasoning, or nutritional yeast. Fresh broccoli works too.

Ingredients

  • 1 lb (454 g) frozen broccoli florets (do not thaw)
  • 2 Tbsp canola oil
  • 1 tsp lemon-herb seasoning
  • 1/2 Tbsp lemon juice

Instructions

  • Preheat the oven to 425°F (218°C). Lightly coat a large rimmed baking sheet with 1 Tbsp oil and place it in the oven to preheat.
  • Separate any frozen pieces that are stuck together and halve any very large florets. Do not thaw. Toss the broccoli with the remaining 1 Tbsp oil.
  • Arrange the broccoli on the hot baking sheet in a single layer, leaving a little space between pieces.
  • Roast for 10 minutes, turn the florets, then roast another 8–10 minutes, or until edges are browned and broccoli is tender-crisp.
  • Remove from the oven, toss with seasoning and a splash of lemon juice, and serve immediately.

Vary the seasoning to suit your taste: try Italian seasoning, Cajun spice, lemon-herb blends, lemon-pepper finishing salt, hot pepper flakes, Montreal steak spice, Season All, Parmesan, or nutritional yeast.
