After the success of Cocktail Week earlier this year, I’ve been sharing my favorite summer cocktails — and next up is a Ginger Beer Mojito. It’s the classic mojito updated with ginger beer instead of club soda. The bright ginger bite and extra fizz make this version one of my new favorites.
For these drinks I’m using Q Mixers Q Ginger Beer. I picked it up at my local Safeway and I keep cans on my bar cart for quick cocktail-making. - Less sweet than many brands — I prefer cocktails that aren’t overly sugary, and this ginger beer strikes a good balance.
- High carbonation — I love a super bubbly drink. This ginger beer has great fizz, making the cocktail extra refreshing.

- Great for quick cocktails — Single cans are convenient for making one or two drinks without opening a large bottle of soda.

Making this mojito is quick and simple. Muddle lime and mint in a cocktail shaker or tall glass, add the remaining ingredients, then top with ginger beer and garnish with a mint sprig. I grow mint every year mostly for drinks like this — it’s that good.
If you prefer, muddle the lime and mint directly in the serving glass and leave them in the drink instead of straining.

Ginger Beer Mojito

Ingredients
- 2 ounces of white rum
- ½ of a medium lime, juiced (about 1 1/2- 2 tablespoons/ 3/4 oz of juice)
- 1 ½ tablespoons 3/4 oz of simple syrup
- 5 mint leaves
- Q Mixer’s Gingerbeer
- Ice
- Garnish: additional mint + lime wedges
Instructions

In a cocktail shaker or tall glass, muddle together the mint and lime juice.

Add the simple syrup, rum, and ice. Cover and shake about 30 times or until the mixture is cold and combined.

Strain into a tall glass filled with ice and top with ginger beer. Garnish and enjoy.
