- 8 sausage patties; I used Hot Breakfast Sausage Roll, 1 lbs.
- 6 large eggs + 1/4 cup of water
- 8 slices of deli American cheese (cheddar, gouda, or Swiss)
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp butter or olive oil for cooking, and toasting bagels
Instructions
Cook the eggs:
- Whisk the eggs with water, salt, and pepper.
- Pour the whisked eggs into a greased baking dish (or a parchment-lined pan) and place that dish inside a sheet pan.
- Pour about 1/2 cup of water into the sheet pan to create steam around the baking dish. This helps the eggs bake gently and results in a smooth texture.
- Bake at 350°F (175°C) for 15–17 minutes, or until set. Alternatively, scramble the eggs in a skillet over low heat or bake them in muffin tins.
