Maple Dijon pork tenderloin makes an easy weeknight dinner that’s flavorful and kid-friendly.

My family eats a lot of chicken and turkey, and we keep Mondays plant-based, but every so often I like to serve something different. This week I made Maple Dijon Glazed Pork Tenderloin, a recipe I learned from my mother-in-law. I wasn’t sure how the kids would react, but they both loved it — my four-year-old even asked for seconds. The recipe is simple: about 10 minutes to prepare and just over an hour to cook, making it a great option for evenings when you get home early enough to finish dinner that night.

Maple Dijon Glazed Pork Tenderloin
Ingredients
- 2/3 cup maple syrup
- 3 tbsp gluten-free Dijon mustard
- 2 tbsp apple cider vinegar
- 2 tbsp soy sauce
- Salt and pepper to taste
- 2 lbs pork tenderloin boneless
Instructions

Preheat the oven to 350°F (175°C).

Place the pork in a shallow baking pan (a 13×9-inch Pyrex works well).

Whisk the maple syrup, Dijon mustard, apple cider vinegar, soy sauce, and salt and pepper together. Pour the glaze evenly over the pork.

Bake for about 1 hour and 15 minutes, or until the internal temperature reaches 145°F (63°C).

Remove from the oven and let the pork rest for 10 minutes before slicing.

Slice the pork and serve on a platter with the remaining glaze on the side.

Toddler tip: For younger children who need softer food, blend one serving of cooked pork with rice or oatmeal. Add 1 teaspoon of the glaze and a teaspoon of water at a time until the texture is smooth. You can also stir in some pureed broccoli for extra vitamins.
