These bliss balls are my go-to for when I need something quick and satisfying. They pair well with other grab-and-go options like espresso overnight oats for a balanced snack that keeps me going between meals.

Why You’ll Love This Recipe
Simple ingredients: Only six ingredients, many of which you likely already have in the pantry.
Blood sugar stable: Adding collagen powder helps add protein so the bites are less likely to cause a sugar crash.
Quick to make: You can assemble the mixture in about 10 minutes—no baking required.
Great texture: Soft and almost fudgy, these bliss balls appeal to both kids and adults.
Ingredients and Substitutions

- Dates: Soak pitted dates in warm water for 10–15 minutes to soften them for blending; this helps create a sticky paste that binds the mixture.
- Cacao powder: Use cacao for extra nutrients, though unsweetened cocoa will work in a pinch.
- Collagen powder: Adds protein and helps with texture. You can substitute a neutral protein powder if needed, but expect slight texture changes.
- Walnuts: Provide healthy fats and texture. Swap in pecans, pistachios, or toasted hazelnuts for a different flavor.
- Caramel sauce: A simple dairy-free caramel made with runny almond butter, maple syrup, and vanilla makes a delicious drizzle—use runny nut butter so it’s easy to pipe.
See the recipe card below for exact quantities and full instructions.
Flavor Variations
Chocolate chips: Stir in dairy-free chocolate chips for a bit of crunch.
Dried fruit: Replace some chocolate with dried blueberries or cherries for a fruity twist.
Zests: Add orange or lemon zest for brightness—reduce cacao slightly if you want a lighter chocolate note.
Nuts: Swap walnuts for toasted pecans, pistachios, or hazelnuts for a different flavor profile.
How To Make Dark Chocolate Bliss Balls

Step 1: Pulse the walnuts in a food processor until finely chopped, then transfer to a large bowl.

Step 2: Add cacao, collagen, and sea salt to the chopped nuts and mix to combine.

Step 3: Blend soaked dates with maple syrup and vanilla until mostly smooth to form a paste.

Step 4: Fold the date paste into the dry mixture, adding a tablespoon of water if needed to reach a tacky, moldable texture.

Step 5: Grease your hands lightly with coconut oil and roll the mixture into 12 balls. Place them on parchment and freeze while you prepare the drizzle.

Step 6: Whisk almond butter, maple syrup, and vanilla to make a runny caramel. Pipe or drizzle over the chilled bliss balls and enjoy.
Expert Tips
For a nut-free version, use sunflower seed butter in the caramel and replace walnuts with toasted sunflower seeds. Toasting nuts first intensifies their flavor. Use runny almond butter so the caramel is easy to pipe.
If the mixture is too sticky, add 1 tablespoon extra collagen (or a bit more dry ingredient) to firm it up. If it’s too dry, add water or a little extra maple syrup one teaspoon at a time.
How To Store Them
Store these bliss balls in the freezer. Dates won’t freeze rock-hard, so you can enjoy a ball straight from the freezer or let it sit at room temperature for 3–5 minutes to soften slightly.
Because they can be sticky at room temperature, consider rolling them in cacao powder or shredded coconut before drizzling caramel, or insert a stick for easier handling.
Dark Chocolate Bliss Balls FAQs
Bliss balls (also called energy balls or bites) are small, no-bake snacks typically made from dates blended with nuts and other flavorings. They’re bite-sized, nutrient-dense, and easy to customize.
Add more dry ingredients like collagen or protein powder, or roll the balls in shredded coconut or cacao powder to reduce stickiness.
If it’s too dry, add small amounts of water, non-dairy milk, or nut butter, one teaspoon at a time, until the mixture becomes tacky and holds together.

For the bliss balls
- 1 cup dates, pitted & soaked
- 1 cup walnut halves
- 1/4 cup cacao powder
- 2.5 tbsp collagen powder
- 1/2 tsp sea salt
- 1/2 tsp vanilla extract
- 2 tbsp pure maple syrup
- 2 tbsp water, if needed
For the caramel sauce
- 1/8 cup fresh, runny almond butter
- 1 tbsp maple syrup
- 1/2 tsp vanilla extract
Instructions
Make the balls
- Grind the walnuts in a food processor and transfer them to a large bowl.
- Add cacao, collagen, and sea salt to the nuts and mix.
- Blend the soaked dates, maple syrup, and vanilla until mostly smooth, scraping as needed.
- Combine the date paste with the dry mixture. If the mix is too dry, add a teaspoon of water at a time until tacky.
- Grease your hands lightly with coconut oil and roll into 12 balls. Place them on parchment and freeze to firm up.
Make the drizzle
- Whisk almond butter, maple syrup, and vanilla until smooth. Add water one teaspoon at a time if a thinner consistency is desired.
- Place the sauce in a piping bag or small plastic bag and snip a corner. Remove the chilled balls from the freezer and pipe the caramel over them.
- Store the balls in a single layer in the freezer until ready to enjoy.
Notes
Soak dates in warm water for 10–15 minutes before blending to make the paste easier to achieve.
Freezing the balls briefly before drizzling helps them hold their shape.
Use runny almond butter so the caramel is easy to pipe. If your almond butter is thick, stir in a teaspoon of warm water to loosen it.
Freeze the balls flat (not stacked) to avoid smearing the caramel on other balls.
You can grind the walnuts separately and then make the date paste, or use a food processor for everything—use whichever method you prefer.
