What is Fathead Dough

Fathead (or Fathead) dough is a popular keto, low-carb substitute for traditional bread and buns. Typically made with almond flour, it’s gluten-free and uses melted mozzarella and cream cheese to bind the dough. The texture and flavor are surprisingly satisfying, and many non-keto eaters enjoy it as well.
If you aren’t following a low-carb diet, simply use regular pizza dough. The video demonstration uses regular pizza dough.

Ingredients

  • The regular pizza dough version:
  • 1 pizza dough, thawed and divided into 4 pieces
  • Burger patties:
  • 16 oz 80/20 ground beef
  • 1 tsp salt and 1 tsp pepper
  • 1 tsp pizza seasoning (or substitute Italian seasoning)
  • Olive oil for the skillet
  • Pizza toppings:
  • 2 cups shredded mozzarella
  • 24 slices pepperoni
  • Pizza sauce
  • The keto low carb version (Fathead dough):
  • 4 oz cream cheese
  • 1 cup shredded mozzarella
  • 2 eggs, beaten
  • 1/4 tsp garlic powder
  • 2/3 cup almond flour, plus extra for dusting
  • Pizza ingredients for keto version:
  • 4 pre-cooked burger patties (homemade or store-bought)
  • 2 cups shredded mozzarella
  • 24 slices pepperoni
  • Pizza sauce

Instructions

  1. Regular version
  2. Preheat the oven to 425°F (220°C).
  3. Mix the burger ingredients and form four equal patties.
  4. Drizzle a skillet with olive oil and cook the patties over medium-high heat about 3 minutes per side, or until done to your preference.
  5. Place a cooled patty on each piece of dough.
  6. Top each patty with pizza sauce, shredded mozzarella, and pepperoni.
  7. Wrap the dough around each patty and place on a greased sheet pan.
  8. Bake at 425°F for about 15 minutes, until the dough is golden and the cheese is melted.
  9. Keto low carb (Fathead) version
  10. To make fathead dough, melt the cream cheese and mozzarella together until smooth.
  11. Add the beaten eggs, garlic powder, and almond flour; mix until a sticky dough forms.
  12. Spoon the dough onto greased plastic wrap, cover, and refrigerate until firm, about 30 minutes.
  13. Dust with almond flour, place between plastic or parchment, roll into a circle, and divide into four pieces sized to wrap each burger.
  14. Place a cooled patty on each dough piece, top with sauce, cheese, and pepperoni, wrap, and seal.
  15. Bake at 425°F for about 15 minutes until cooked through and golden.

Notes

  • Pizza seasoning adds great flavor. If you can’t find it, substitute Italian seasoning.
  • Cooking time: Burgers cook to varying doneness. For safety, USDA recommends an internal temperature of 160°F for ground beef.
