This hot cocoa started as a quick fix when I ran out of boxed mix but still wanted a creamy cup. I used common cupboard ingredients and mixed them together—what followed felt almost too simple to call a recipe, but it works beautifully.

I’ve made this hot cocoa many times since creating it. The result is rich and full-flavored without the cloying sweetness of many store-bought mixes.

Compared to several commercial brands I tried, this homemade version feels deeper and less artificial—more chocolate, less sugar. I hope you enjoy it as much as I do.

Cocoa Powder

For best results use a Special Dark Dutched cocoa. This Dutch-processed cocoa is darker and mellower than natural cocoa and gives the drink a smooth, rounded chocolate flavor.

Dutch-process cocoa undergoes alkalization, which reduces acidity and deepens color. That mellow quality works especially well in a simple hot cocoa made with only a few ingredients.

What kind of milk should I use in this?

I’ve used many kinds of milk with this recipe and they all work well. My favorites are whole dairy milk, oat milk, and almond milk. Plant-based milks produce a tasty vegan version.

Note: some oat milk brands foam and can boil over in the microwave. Watch the mug while heating and pause to stir if it starts to bubble up.
