I’m loving this Slow Cooker Chicken Taco recipe, and so are my kids. It’s simple to prepare and packed with flavor. We usually make ground beef tacos, but last night I decided to switch things up. I tossed chicken and spices into my slow cooker and had an easy, delicious dinner with almost no effort.

Slow Cooker Chicken Tacos
I had leftover chicken tenderloins to use and a batch of homemade taco seasoning, so these slow cooker chicken tacos were an obvious choice. All they needed were tortillas and toppings. Quick, effortless, and family-friendly.

Ingredients
- 1 lb chicken breasts
- 1 cup chicken broth
- 1 tbsp chili powder
- 1 1/2 tsp cumin
- 1 tsp salt
- 1 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp corn starch
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp crushed red pepper flakes
- 1/4 tsp oregano
- 1/4 tsp brown sugar
- 1/4 tsp cayenne (optional for heat)
- 12 tortillas or taco shells
- Your favorite toppings (lettuce, cheese, salsa, avocado, sour cream, etc.)

Directions
- Place the chicken breasts in the slow cooker. Add the chicken broth and all spices, stirring to combine.
- Cook on low for 6 hours, until the chicken is tender and cooked through.
- Shred the chicken with two forks (or use a stand mixer to shred quickly), return the shredded chicken to the slow cooker, and cook an additional 30 minutes to absorb the flavors.
- Serve on soft tortillas or crunchy taco shells. Top with your favorite toppings and enjoy.

Shredding the chicken is easy with a stand mixer—just place the warm breasts in the bowl and use the paddle attachment for under a minute. These chicken tacos are flavorful and often more tender than beef tacos. They also work beautifully over a salad or stuffed into burritos if you want to change things up. Preparing the chicken in the morning and letting the slow cooker do the work means dinner is practically ready by evening—perfect for busy weeknights.
