ONE-PAN SPICY MEXICAN RICE SKILLET
Mexican-inspired meals are the kind of comfort food that always feel warm, familiar, and satisfying. This One-Pan Spicy Mexican Rice Skillet brings together pantry staples and fresh toppings in a way that tastes bold without making dinner complicated. The rice cooks right in the skillet with black beans, tomatoes, corn, broth, jalapeno, and spices, so every bite is packed with flavor.
This recipe is especially helpful when you want a filling meal without using several pots and pans. Everything comes together in one skillet, which makes both cooking and cleanup easier. It is also a great meatless dinner option, thanks to the combination of rice and black beans. If you prefer to add protein, seasoned taco meat, shredded chicken, or shredded pork would work well stirred into the skillet or served on top.
The heat level is easy to adjust. The jalapeno, chili powder, and red pepper flakes give the dish its spicy kick, while the corn, tomatoes, cheese, avocado, sour cream, and lime juice help balance the flavors. Serve it as a main dish, a hearty side, or a base for a quick Mexican rice bowl.
HOW TO MAKE MEXICAN RICE SKILLET

- In a large skillet, heat the olive oil over medium heat. Add the finely diced jalapeno and minced garlic, then saute for about 30 seconds, just until fragrant. Add the rice and stir well so the grains are lightly coated in the oil. Cook for about 1 minute to help the rice absorb flavor from the garlic and jalapeno.

- Stir the black beans, undrained diced tomatoes, corn, and chicken broth into the skillet. Add cumin, red pepper flakes, chili powder, kosher salt, and black pepper. Mix everything together so the rice is evenly distributed and the seasonings are blended throughout the skillet.

- Bring the mixture to a boil, then reduce the heat to low and cover the skillet with a lid. Let it simmer for 15 to 20 minutes, or until the rice is tender and the liquid has been absorbed. Try not to lift the lid too often while the rice cooks, as keeping the skillet covered helps the rice steam properly.

- Once the rice is cooked, stir in the lime juice for a fresh, bright finish. Sprinkle the shredded Mexican blend cheese or cheddar cheese over the top, then place the lid back on the skillet for a few minutes so the cheese can melt. Finish with chopped cilantro, diced avocado, and sour cream before serving.

WHAT CAN I DO TO ADD MORE HEAT?
If you like a spicier Mexican rice skillet, increase the amount of jalapeno, chili powder, or red pepper flakes. You can also leave in some of the jalapeno seeds if you want a stronger kick. Start with a little extra spice and adjust to taste, especially if you are serving the dish with sour cream, avocado, or cheese, which can soften the heat.
