You’ll be the hostess with the mostest: set a red tablecloth, arrange fresh roses, place a bowl of strawberries and fruit dip nearby, and serve this eye-catching cocktail. It’s simple to prepare ahead and looks fabulous when presented in stemless or large wine glasses with a frozen strawberry popsicle tucked inside.
What is Stevia In The Raw?
This recipe uses Stevia In The Raw®, a zero-calorie sweetener made from an extract of the stevia plant. It’s a convenient sugar substitute for drinks, baking, and cooking. In many recipes one packet or one measured tablespoon of a concentrated stevia product replaces multiple teaspoons of sugar, reducing calories while keeping sweetness. Use the amount called for in the recipe to maintain balance with the fruit and wine flavors.
Strawberry Rosé Popsicle Punch Ingredients
- Frozen strawberries (thawed and roughly chopped)
- Stevia In The Raw (or another concentrated stevia sweetener, adjusted to taste)
- Lemon juice (freshly squeezed is best)
- Rosé or sparkling rosé wine (chilled)

How to Make Strawberry Rosé Popsicle Punch
- In a blender, combine the thawed strawberries, Stevia In The Raw (or measured stevia), and lemon juice. Blend until completely smooth.
- Pour the puree into popsicle molds. With a standard 10-popsicle mold you should fill about five molds (the puree is dense, so five full-size popsicles is typical). Cover the mold, insert sticks, and freeze until solid — at least 8 hours or overnight for best results.
- To remove the popsicles, briefly dip the mold up to the rim in cool water to loosen them. Place the popsicles on a baking sheet and return to the freezer until ready to serve. For longer storage, transfer popsicles to a resealable freezer bag or airtight container; they keep well frozen for several weeks.
- To serve: stand one popsicle stick-up in a large wine glass and pour chilled rosé over it. The popsicle will slowly melt into the wine, infusing it with bright strawberry flavor and a hint of sweetness. Serve immediately so guests can enjoy the visual and the evolving taste as the popsicle softens.
